Christmas Wreaths
I have made so many of these cookies that I have had nightmares
about them. They are still one of my absolute favorite Christmas
cookies. They are not hard to make, but they are a little
bit time consuming. The candied cherries make for very attractive
cookies. They have a rich vanilla flavor that melt in your
mouth.
1 3/4 cups flour
1/2 cup softened unsalted butter
1 teaspoon baking powder
1 cup sugar
1/2 cup heavy cream
2 teaspoons pure vanilla extract
candied green cherries, quartered
candied red cherries, halved
In a large bowl cream the butter and sugar until light and
fluffy. Whip in the cream and vanilla until creamy and smooth.
In a small bowl whisk the flour and baking powder, then slowly
add to the butter mixture. Turn the dough out onto a lightly
floured surface and knead quickly. Return to the bowl, cover,
and chill for 4 hours. Take a small ball of dough and roll
into strips about 7 inmches long. Take two strips and twist
together into a circle. Place on the prepared cookie sheets.
Press a red cherry half into each cookie and 2 green cherry
quarters on each side to form a "flower". Bake 10
to 13 minutes, or until golden. Cool on the sheets for 5 minutes,
then carefully remove onto wire racks. Store in an airtight
container or freeze.
