Filled Cheese Cookies


These savory cookies are one of my favorite cookies to eat. I am not much of a sugar fan, so these cookies really hit the spot. You can use chutney, jam, or marmalade with these cookies with wonderful results. The jam does have to be pretty thick or else you will have a gooey mess on your hands. The nuts add a nice crunch, but need to be ground really fine so that the dough does not crack. The amount of jam and nuts that you will need depend on the size of your cutters.

4 cups flour
4 cups finely grated sharp cheddar cheese
1 teaspoon salt
1 cup shortening
1/4 cup milk
jam, chutney, or marmalade
nuts, finely ground

Mix the flour, cheese, and salt together. Cut in the shortening until the mixture resembles coarse crumbs. Stir in the milk. Cover and chill for at least 2 hours. Preheat the oven to 400 degrees and grease cookie sheets. Roll out the dough to 1/8 inch. Cut into pairs of cookie shapes. In a small bowl mix the jam with the nuts. Place a teaspoon of filling into each cookie. Cover with another cookie and seal the edges. Bake for 12-15 minutes.
